Apricot Kernel "Chinese Almond" Tea. Recipe included.

Chinese Almond Tea is a very delicious sweet drink with a distinctive aroma taste. It is a very nutritious and popular drink with postpartum moms.


The almonds used in this recipe refer to Chinese apricot kernels. Apricot kernels are used in Chinese cuisine and has medicinal function. It is a common staple food in many Chinese families' kitchen.


Health Benefits:

Apricot kernels are high in fat, mainly monounsaturated fatty acids.


It is a source of Vitamin E, omega-9 and omega 6 fatty acids that helps to improve skin tone, softness and radiance.


It also contains a good amount of phosphorus, calcium and iron, which help to strengthen your bones.


In Traditional Chinese Medicine, Southern apricot kernels are known to help moisten the lung while Northern apricot kernels reduce coughing.


Apricot kernels are not meant to be eaten raw. They need to be boiled before consumption. You can easily find apricot kernels at your local Chinese herbal store or Chinese supermarket.

Recipe:

Makes 2-3 servings

Ingredients:

200g (1 cup) Peeled Southern apricot kernels (Nan Xing南杏 )

15g (1/8 cup) Peeled Northern apricot kernels (Bei Xing 北杏) - optional

15g (1/8 cup) Raw White Rice

1000ml Water

4-5 Egg whites

15g (1/8 cup) White Sugar


Cooking Method:

  1. Rinse the apricot kernels and rice together with water in a bowl and then drain.

  2. Put 1000 ml of water, apricot kernels and rice into a blender.

  3. Use high speed to blend for 4-5 mins. When it's ready, the mixture will be creamy white in color.

  4. Pour the mixture into a cloth bag to separate the residues. Make sure that you have a large bowl underneath the cloth bag before you pour it. Squeeze the mixture from the cloth bag and discard the residue.

  5. Pour the strained liquid to a pot and bring to boil.

  6. Add sugar to taste.

  7. Pour egg whites into the pot and stir well.

  8. Serve & enjoy!
